Ingredients:

  • 3 Bell peppers, halved
  • 3 cups Basic cauliflower rice
  • 450g Ground turkey or chicken
  • 1 Onion, diced
  • 1 cup Tomato sauce
  • 1 tablespoon Italian seasoning
  • 1 cup Mozzarella cheese, shredded

Instructions:

  1. Preheat the oven to 190°C (375°F).
  2. Prepare the basic cauliflower rice.
  3. In a separate pan, cook ground turkey or chicken with diced onion until browned.
  4. Mix the cauliflower rice into the meat mixture and season with Italian seasoning.
  5. Fill the halved bell peppers with the cauliflower and meat mixture.
  6. Top each Pepper with tomato sauce and shredded mozzarella.
  7. Bake for 25-30 minutes or until the peppers are tender and the cheese is melted.
